Even the ancient Greeks were concerned about the quality of food believing that eating healthy food is one of the keys to living a longer and happier life. According to the researchers, colorful fruits and vegetables are extremely useful for the human health since they contain the necessary dose of elements, which can help people to fight diseases. Eating food which consists of disease-fighting compounds is an extremely smart decision for people who take care of their body and spirit. 

In this book, the researchers try to explain in what ways the colors of food influence the human health and what is the practical use of colorful diet. Comparing the cuisines of different nations, the researchers conclude that the human health depends on the number of vegetables and their proportion in a daily diet. Thus, Asian cuisine consists of rice, fish, soy, and a variety of vegetables, which promote health. However, the Asians who come to the US and tend to consume more fats and salt eating junk food suffer from obesity and other health problems as well as the native US citizens. 

When our parents asked us to eat more vegetables, they were right. Perhaps, they were not aware of the scientific background of this decision, but their requests were defined by many years of experience of our ancestors. Susan Bowerman and David Herber have made an attempt to discover the truth about the colors of fruits and vegetables, as well as their classification system. According to the authors, all fruits can be classified by their color, which is the result of containing certain chemicals. Each of these chemicals has special functions, but almost all of them take care of the human health. 

The red/purple group, which includes blueberries, red pepper, red grapes, eggplants, plums, red cabbage, etc. is rich in anthocyanin, the antioxidants known for reducing the chances of heart diseases. The orange group (pumpkin, carrots, apricots, mango, etc.) provides Alfa and Beta carotene, which promotes eye and skin health. The green group is rich in sulforaphane and isothiocyanates, which stimulate the cells to fight cancer. This group includes broccoli, kale, cabbage, cucumbers, etc.

In conclusion, people should ealize that they are responsible for their health and eating healthy food is the key to living a long and prosperous life.
